- Viticulture: Certified Biodynamic
- Soil: Silty clay loam
- Grape from Gemtree Vineyard
- Age of vineyard: 20 years old
WINEMAKING
- Grapes: 100% Verdelho from certified Biodynamic block in McLaren Flat.
- Skin fermented for about 10 days and then pressed and aged for 12 months in a large stand-up foudre.
- Pumped over twice a day to extract texture and color.
- Aged on fine lees until 3 months before
bottling. - No fining, no filtration.
