GROWING
- Viticulture: Biodynamic
- Soil: Deepest in the middle (straddling a dry winter creek) with gravelly alluvial sands leading to ironstone and clay on the slopes.
- Grape from epic little plot in McLaren Vale. Rows orientated East-West on a North-to-South slope (lending to less sun exposure).
WINEMAKING
- Verdelho is handpicked early, ahead of the heat of harvest.
- Separated into two parcels for fermentation:
- Parcel 1: Semi-carbonic with 50% whole bunch and 50% destemmed for increased extraction of stem tannin and carbonic fruity aromatics.
- Parcel 2: Destemmed and kept on skins for 3 weeks, pumped over twice daily to increase skin tannins and develop savoury secondary flavours (treated like a big Barossa red, but aiming for white elegance/acidity).
- After primary ferment, both parcels are pressed and aged for 18 months on full lees in a large format foudre and small format oak.
- Components are blended into tanks and allowed to integrate for 12 months before bottling.

- A white wine treated like a red to extract tannins and secondary flavours.
- Retains elegance and acidity.
- Highly textural and complex due to split fermentation techniques.
