WINEMAKING
- Directly pressed Pinot Gris into stainless steel
- The small amount of skin contact prior to an extended fermentation
- Ferment to bone dry (0.3g/L of residual sugar)
- No MALO; lees stirring for 2 months

- Built for long sunsets, days by the beach, or as an alternative after sweaty weekly household chores
- As varietal as can be with all the nashi pear, white nectarine, lovely minerality, and beautiful texture
- Not much to be said, just a delightfully drinkable Pinot Gris
