WINEMAKING
- Using the same Gewürztraminer blended in Esoterico, some were picked early to add good acidity and chalky texture
- Crushed and pressed straight to stainless steel, fermented to bone dry (0.5g/L of residual sugar)
- Racked off gross lees then matured on fine lees for 6 months before bottling. No battonage. Aged in stainless steel to retain the aromas
WHAT’S GOOD?
- Generous, sweet, and fragrant on the nose, as you should expect from a Gewürztraminer
- A portion of early picked grapes surprisingly added Asian aromatics like kaffir lime leaves and potpourri (a mixture of dried flowers, spices and herbs)
- Sweet on the nose, but bone dry on the palate. However, there is still a good range of ripe fruits like golden apple, white nectarine, and pineapple with every sip
- A perfect match for Southeast Asian cuisine, especially for Thai and Viet popular dishes
