GROWING
- 3 hectares of 30-year-old vines
- Yield: intentionally kept low, roughly 4-5 clusters per vine, to ensure concentration
- Soils: Ponca, which is composed of alternating layers of marl and sandstone. A very well-drained soil, suited to the high rainfall level of the region
- Hand harvested
WINEMAKING
- Grapes are destemmed and fermented with native yeast in oak vats, no sulphur added, no temperature control
- 8-14 days on the skins, gently pressed and transferred to 3500-liter Slavonian oak barrels and stayed on lees for 1.5 years
- Bottled without filtration and with only a minuscule amount of sulfur
- At least 4 months in a bottle before release

- SIVI means ‘’grey’’ in Slovenian. Part of the Linea S. This wine is designed to be enjoyed at an earlier stage
- Copper orange/pink hue, incredible depth of flavor, and aromatic explosiveness
- Hints of blood orange and red plum with an elegant touch of eucalyptus and baking spices. Rich and high in minerals
- Packed with grippy tannins for a savory edge and sky-high acidity that delivers an electrifying freshness
- Serving temperature: 13-15°C
