WINEMAKING
- Organic grapes of Termarina, dried under the sun
- Native yeasts only, no SO2 added, no filtration or fining
- Fermentation stops spontaneously
- Aged in oxidation in old barriques
- Solera method started in 2017, with the wine aged for a further 6 months (minimum) in bottle before release
WHAT’S GOOD?
- A light red with a light trend to orange
- Very intense aromas of cacao, pepper, and spices
- Oxidation notes, complemented by notes of jammy red fruits
- Best served at 13-15°C
