- Organic farming practices
- Soil: Clay loam soil, sub-alkaline with 12% active limestone
- Vineyard in Varano de’ Melegar
WINEMAKING
- Long maceration 3 months for the 2017 grapes and 8 months for the 2018 grapes
- Wine aged for 24 months on the yeasts before tirage
- Fresh must from 2019 was added to start the second fermentation in the bottle
- Native yeasts only, no SO2 added, no filtration, and no addition of stabilizers
- Manual disgorge (À la Volée), zéro dosage
