Pétillant Naturel (Pét-nat), which stands for “naturally sparkling”, is made by naturally fermenting grape juice (no yeast added). What sets it apart from other sparkling wines is that it’s bottled while fermentation is still ongoing. Timing is critical – too early, and it can become overly carbonated, creating a potential bottle bomb; too late, and it loses its sparkling quality.
