GROWING
- Soil Type: A layered bed of sedimentary materials including compressed sandstone, silica, siltstone, and mud-clast conglomerate formed over 65 million years ago
- Nikau Home block
WINEMAKING
- Inspired by Ganevat’s Pinot Noir – embracing elegance, power and complexity at such low alcohols
- Healthy grapes picked at a baumé of 11.5 and a TA (titratable acid) of 11.9
- Hand-sorted, hand destemmed, and cold-soaked for 48 hours to start fermentation very slowly
- Fermentation lasted 10 days before pressing to a small stainless steel tank to finish fermenting as juice
- Undisturbed for the next 9 months until bottling
- Addition of 10ppm SO2 at bottling
