GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Slovenské vineyard in Moravský Žižkov, a true heart of Nestarec vineyard
- Age of vines: 20-25 years old
WINEMAKING
- Predominantly Neuburger, with 5% of Malvasia
- Harvested and sorted by hand
- The whole uncrushed grapes are macerated for 7 days
- Pneumatic press for 10 hours in the second half of fermentation
- Spontaneous fermentation then aging in a used 3000L Stockinger oak barrel for 2 years
- No fining, no filtration
- No sulfur addition
- Bottled on 17 August 2023
