GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Slovenské vineyard in Moravský Žižkov, a true heart of Nestarec vineyard
- Age of vines: 20-25 years old
WINEMAKING
- Predominantly Neuburger, with 5% of Malvasia
- Harvested and sorted by hand. The whole grapes are foot-stomped and left for 12 hours on skins
- Pneumatic press for 20 hours, followed by a 2-month spontaneous fermentation
- Aged in a 9-year-old 3000L Gamba oak barrel
- No fining, no filtration
- Sulfur addition: 5 ppm before bottling
- Bottled in October 2022
