GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Zadní Hora vineyard in Velké Bílovice, Milan Nestarec’s first vineyard
- Age of vines: 35-40 years old
WINEMAKING
- Primarily Blaufrankisch with Pinot Noir (30%), and Pinot Gris (15%)
- Harvested and sorted by hand
- Classic open vat maceration with manual punchdowns, 3 weeks on skins
- The Pinot Noir and Gris were vinified together, Blaufrankisch separately. Blended before bottling.
- Free-run juice only, with 25 days of spontaneous fermentation
- Aged in 1 to 7-year-old 225L & 600L oak barrels
- No fining, no filtration
- Sulfur addition: 2 ppm before bottling
- Bottled in August 2024
WHAT’S GOOD?
- “Different but same.” The wine has undergone a significant transformation to reach its ideal expression.
- The current style is believed to do justice to its early-ripening, forest-protected vineyard.
- Blaufränkisch makes up the majority of the vintage, while Pinot Gris acts as a bridge between the Blaufränkisch and the noblesse of Pinot Noir.
- The resulting wine is characterized by elegance, roundness, and finesse.
- Best served slightly chilled (16-18℃)
