GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Zadní Hora vineyard in Velké Bílovice, Milan Nestarec’s first vineyard
- Age of vines: 35-40 years old
WINEMAKING
- Primarily Pinot Noir, with 15% Pinot Gris & 15% Blaufrankisch
- Harvested and sorted by hand
- Destemmed, gently crushed, and macerated on skins, with regular punch downs
- Free-run juice only, with 25 days of spontaneous fermentation
- Aged in 1 to 7-year-old 225L & 600L oak barrels
- No fining, no filtration
- Sulfur addition: 5 ppm before bottling
- Bottled in November 2022
WHAT’S GOOD?
- Different, but some similarities with the previous vintages. Harmony. Settling down.
- Pinot Gris is a bridge between the dominant Pinot Noir and the Moravian grape Blaufränkisch, highlighting elegance, roundness & finesses
- A wine that does justice to this early-ripening, forest-protected vineyard of Zadní Hora
- Best served slightly chilled (14-16℃)
