WINEMAKING
- Blaufränkisch, Pinot Noir harvested and sorted by hand
- Vinification starts with classic fermentation of 100% destemmed and uncrushed berries
- Gentle push by the pneumatic press for free-run juice only, followed by spontaneous fermentation in stainless steel and wood, with gentle remontages (pumping over)
- Aged in stainless steel and wood
- No fining, no filtration
- Sulfur addition: 3 ppm at bottling
- Bottled in April 2025
WHAT’S GOOD?
- A typical rural Moravian red that Milan has been very familiar with ever since he was a kid, no new oak barrels, de-acidifiers, tannins, and all the other BS that would cover the light, bright, drinkable character native to local wines
- A classic juicy Moravian red to be served in a healthy measure of one liter
- The kind of wine you can drink even without moderation
- Ripe fruit, tomato
- High acidity, long finish
- Best served slightly chilled (16-18℃)
