Pinot Gris harvested and sorted by hand
Direct press of whole bunches in autoclave
Spontaneous fermentation
On skins and stem until 1/3 done, then finished in pressure tank to keep the CO2 in. The progress is 10 days in total.
Aged in stainless steel tank
No fining, no filtration
No sulfur addition
Bottled in January 2025
