WINEMAKING
- Pinot Gris harvested and sorted by hand
- Direct press of whole bunches in autoclave
- Spontaneous fermentation
- On skins and stem until 1/3 done, then finished in pressure tank to keep the CO2 in. The progress is 10 days in total.
- Aged in stainless steel tank
- No fining, no filtration
- No sulfur addition
- Bottled in January 2025
