GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Zadní Hora, Přední Hora, and Úlehle vineyards in Velké Bílovice, Milan Nestarec’s first vineyard
- Age of vines: 25 years and older
WINEMAKING
- Harvested and sorted by hand, each variety separately
- Gently destemmed and macerated on skins overnight, then each variety was pressed separately in a pneumatic press, for ~20 hours. No pumping, juice only moved by gravity
- Spontaneous fermentation in ~40 days. Co-fermentation of all varieties together in oak vats
- Aged in 3000-liter Gamba and Stockinger oak barrels (2-to-12-year-old barrels)
- No fining, no filtration
- No sulfur addition
- Bottled in August 2022
WHAT’S GOOD?
- A drink to have with your everyday meals, very drinkable expression and tempts you to take more sips
- Floral and grassy, later on, it develops into grapefruit and peach
- A completely different wine when it’s a little oxidized and warm. Balanced and very pleasant, refreshing and fresh. A little grapefruit and lemon in the aftertaste
- Best served chilled (11-13℃)
