GROWING
- Organic farming (certified by ABCERT)
- Soil: Clay
- Grapes taken from Slovenské, Stará hora, and Sahary vineyards in Moravský Žižkov, a true heart of Nestarec vineyard
- Age of vines: 20 years and older
WINEMAKING
- Harvested and sorted by hand, each variety separately
- Gently destemmed, berries not crushed to avoid over-extraction. Remontages, open-top vats
- Pressing: Free-run juice only
- Spontaneous fermentation in 11 days. Then 4 more weeks on skins post-fermentation.
- Aged in 3000-liter Gamba and Stockinger oak barrels (2-to-7-year-old barrels)
- No fining, no filtration
- No sulfur addition
- Bottled in August 2022
WHAT’S GOOD?
- Slightly fizzy yet very fresh, cool, summery, and a lot of fun to drink
- Bustling with fresh strawberries, pomegranate & earthy mint, making all the senses tingle with excitement
- A hint of chalky mineral on the back of the palate to round it off
- Best served slightly chilled (15-17℃)
