- Grapes taken from Sahary vineyard in Moravský Žižkov, a true heart of Nestarec vineyard
- Age of vines: planted in 2002
WINEMAKING
- Harvested and sorted by hand, all grapes together
- Direct press of whole bunches, maximum pressure 0.3 bar
- Spontaneous fermentation in 70 days in stainless steel tanks, bottled while still going
- Aged in bottle
- No fining, no filtration
- No sulfur addition
- Bottled in December 2022 with 10 g/l residual sugar. Undisgorged
