WINEMAKING
- 90% Grenache Gris, 8% Carignan Noir, 2% Macabeu.
- Whole-bunch, indigenous yeast fermentation in concrete tank.
- 3 weeks of maceration, pressed into 2500 litre foudre.
- Bottled unfined and unfiltered with no additions after 8 months.
