- Whole bunch Grenache Gris and Macabeu
- Grenache Gris is directly pressed while Macabeu is foot stomped to avoid semi-carbonic maceration
- Short maceration of 5 days
- Fermentation with indigenous yeasts in Austrian foudres, no racking, no pumping over
- Aged on lees in Austrian foudre for 8 months before racked for bottling
- Bottled with no added sulfur
- Unfined and unfiltered
WHAT’S GOOD?
- A deep, macerated white wine with sandy tannins and a flinty, zesty nose
- A hint of sweetness enchants us, but without being overpowering or rich
- A sharp acidity that balances its complexity
