GROWING
- Soil: Limestone, Slate, Gravel and Sand
- Age of vines: 40 years old
- Certified biodynamic by Demeter
WINEMAKING
- Field blend grapes are hand harvested and partially destemmed
- One-third of the grapes ferment on the skin for 3 weeks, while the rest are directly pressed
- Wine is then re-blended and fermentation takes place in used 500L barrels
- Aged in barrel for about 9 months, with no bâtonnage
- Racked once before bottling
- No fining, no filtration
- No sulfur addition
- Bottled in May 2023
WHAT’S GOOD?
- A textural, tactile wine that straddles the line between amber and white
- Chewy yet remarkably fresh, showing spice and orange citrus characters alongside green apple and melon
- Best served chilled (12-15℃)
