WINEMAKING
- 75% Fuji Apple, 25% La France Pear – All from Yamagata prefecture
- Careful sorting fruit then pressed
- Brewed separately in two tanks: one tank – a mixture of Fuji and La France, and another tank – Fuji only
- Oxygen is supplied during fermentation to prevent the reduction
- Near the end of alcoholic fermentation, the cider is transferred to a 3000L stainless steel tank
- Fuji juice is added back to adjust the sugar content
- Fermentation continues in the bottle
- No antioxidants are added
