- 94% Delaware, 6% Steuben – all from Yamagata prefecture
- Fermented in stainless steel vats
- A good portion of Delaware is pressed after 24-hour skin contact, and the rest is directly pressed. Steuben is directly pressed and blended into the cuvée just before bottling
- Bottled with 12 g/L of residual sugar for a light pétillant effect
- Wild yeast, unfined, unfiltered, without any additives, including added sulfites and antioxidants
WHAT’S GOOD?
- Made of 100% grapes – Tastes more like grapes than the grapes themselves
- The aroma carries a candy-like sweetness typical of edible varieties, blending tropical fruit notes—especially banana—with a lactic hint reminiscent of yogurt. The flavor is as fresh as the name implies, with tropical fruit nuances that lead into a citrus peel-like bitterness on the finish
