- Farming: Organic farming practices
- Region: Nanyo city, Yamagata
WINEMAKING
- 90% Delaware, 10% Niagara – All from Yamagata prefecture
- Delaware was destemmed and left on skins for 24 hours, then blended with 12-hour skin-contacted Niagara and Delaware
- Fermented and aged for 7 months in stainless steel vats
- Wild yeast, unfined, unfiltered, without any additives including added sulfites
WHAT’S GOOD?
- Refreshing, with some sweet and sour taste of table grapes, combined with fresh aroma of Japanese pears
- Soft salinity and tannins on the palate, with the lingering taste of young fresh herbs for a tightening finish
