WINEMAKING
- 56% Delaware, 14% Rosarico Bianco, 10% Steuben, 8% Niagara, 7% Seibel 9110, and 5% Neo Muscat – All from Yamagata prefecture
- Fermented in stainless steel vats
- The blend is centered around 24-hour skin-contact Delaware, blended with direct-pressed Steuben just before bottling
- Bottled with 11-12 g/L of residual sugar (from Steuben’s direct-pressed juice) for a light pétillant effect
- Wild yeast, unfined, unfiltered, without any additives, including added sulphites and antioxidants
