- 8-day skin co-fermented Delaware & Niagara, blended with 12-hour skin-contact Delaware
- Fermented in stainless steel vats
- Bottled with 11-12 g/L of residual sugar for a light pétillant effect
- Wild yeast, unfined, unfiltered, without any additives including added sulfites
