GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess with limestone
- Grapes taken from the Úlehle vineyard
- Age of vines: Planted in 1974
WINEMAKING
- Grüner Veltliner harvested and sorted by hand
- Foot trod and macerated for 2 days
- Pneumatic press for 23 hours, followed by a spontaneous fermentation, then aged in a used 3000L Stockinger oak barrel
- No fining, no filtration
- Sulfur addition: 3 ppm before bottling
- Bottled on 6 August 2024
WHAT’S GOOD?
- 2021 shines as one of the best vintages (rivaled only by 2023 – which we can’t wait for!)
- It is an unparalleled expression of old-vine Grüner Veltliner grown on Bilovice loess, combining two key elements of Milan Nestarec’s identity (old-vine Grüner Veltliner and Bilovice loess).
- The soil contains a small amount of limestone, which contributes to the wine’s wit and typicity.
- Best served chilled (12-14℃)
