Grapes were picked, destemmed, and pressed into a stainless steel tank to ferment. Once almost dry, the wine was bottled, so the last phase of the fermentation occurred in the bottle, trapping the CO2 in the wine.

The wine was let rest on lees for 3 months, then disgorged.
