GROWING
- Viticulture: Organic farming and dry-farming
- Soil: Sand over schist
- Grapes from a famous vineyard in Springton, Eden Valley
- Some blocks approaching 100 years old
WINEMAKING
- A field blend of 13 different grape varieties.
- Harvesting starts from a block that is judged to be fully ripe, and all fruits are de-stemmed, and put into small open tanks to co-ferment.
- Baskets with a lot of black grapes are pressed early, and baskets with a lot of white grapes are pressed after about 4 days of skin
contact. - Bottled after racking and aging for about 8 months in stainless steel tanks, egg tanks, and old barrels.
- No fining or filtration.
WHAT’S GOOD?
- This is a juicy and jolly wine, so refreshing that you can easily enjoy a third glass.
- The scent of tangerine and jasmine, with the flavors of peach, apricot, and stone fruit.
- Not as heavy as it looks, but it still has a powerful effect.
