100% certified Savagnin from McLaren Vale.
Picked early February and pressed it into the tank. Cold settled for all the bits in the juice to drop out.
A few liters of the juice were separated and frozen to be added later after the ferment was sugar-dried.
The frozen juice was then added back right before bottling, which created a mini-second fermentation in the bottle that created bubbles.

Super bright and fresh bubbles with soft peach and pear components.
On the palate, it’s a fun style, with soft fruit hints, flowers, and lemon curd dancing together. One glass and you’ll want to finish the bottle.
