GROWING
- Certified Organic (by Southern Cross) Chardonnay grown by Brendan Cameron, Lansdowne Vineyard, Forreston, Adelaide Hills
- Grapes were picked at optimal ripeness
WINEMAKING
- Organic Chardonnay juice, fermented with wild yeast in stainless steel for 3 weeks
- Transferred into old French oak for an 8-month élevage, left untopped for a slow oxidation to happen
- Made from organic grapes only, with nothing added at any stage
- The wine stays unfined and unfiltered
- Bottling took place in January 2024
- Only 80 dozen were made
