GROWING
- Organic farming (certified by ABCERT)
- Soil: Loess
- Grapes taken from Slovenské vineyard in Moravský Žižkov, a true heart of Nestarec vineyard
- Age of vines: 20-25 years old
WINEMAKING
- Predominantly Neuburger, with 5% of Malvasia
- Harvested and sorted by hand on 27 September 2021
- Foot trod and macerated for 3 days
- Pneumatic press for 23 hours, followed by a spontaneous fermentation, then aged in a used 3000L Stockinger oak barrel
- No fining, no filtration
- Sulfur addition: 5 ppm before bottling
- Bottled on 9 August 2024
WHAT’S GOOD?
- 2021 shines as one of the best vintages (rivaled only by 2023 – which we can’t wait for!)
- As an exceptional vintage, Milan experimented with different batches. This is the second release, nearly 3 years after the ’elevage’ (elevation). The first one was bottled in early 2024
- Milan’s long-standing mission to find and showcase the true identity of Neuburger in his dear area
- Unlike flashier, well-known varieties, Neuburger requires dedication from both growers and drinkers. Give it time and discover its hidden depths
- Best served chilled (12-14℃)
