GROWING
- Organic farming (certified by ABCERT)
- Soil: Clay
- Grapes taken from different plots in Velké Bílovice & Moravský Žižkov
- Age of vines: 6 – 21 years old
WINEMAKING
- Harvested and sorted by hand, destemmed, and uncrushed
- Gentle push by the pneumatic press and free-run juice, followed by spontaneous fermentation in open-top vats for 14 days, with regular gentle remontage
- Aged in stainless steel and wood
- No fining, no filtration
- No sulfur addition
- Bottled in April 2023
WHAT’S GOOD?
- A typical rural Moravian red that Milan has been very familiar with ever since he was a kid, no new oak barrels, de-acidifiers, tannins, and all the other BS that would cover the light, bright, drinkable character native to local wines
- A classic juicy Moravian red to be served in a healthy measure of one liter
- The kind of wine you can drink even without moderation
- Ripe fruit, tomato
- High acidity, long finish
- Best served slightly chilled (14-16℃)
