GROWING
- Viticulture: Organic.
- Soil: ~300 m above sea level, deep, ancient alluvial soils, east- west orientation.
WINEMAKING
- Hand-harvested Macabeu, Pecorino, Sémillon, Riesling, Viognier.
- Separate batches, all undergoing skin contact.
- Aged for 12 months in neutral French puncheons and Demis.
- Followed by 6 months of stainless steel settling.
- 50 ppm SOs added at bottling.
- Unfined & unfiltered.

- Layered white blend with citrus blossom, pear, and fresh herbs.
- Crisp acidity with subtle texture.
