- Viticulture: Organically farmed
- Soil: ~300-450 m above sea level, deep, ancient alluvial soils, decomposing granitic sands, hard schist, east- west orientation across the vineyards.
WINEMAKING
- Hand-harvested fruit.
- 50% destemmed, 50% whole-bunch.
- Natural ferment for 3 weeks.
- Aged for 12 months in neutral French puncheons.
- Followed by 2 months of stainless steel settling.
- Minimal 20 ppm SO2 added at bottling.
- Unfined & unfiltered.
