GROWING
- Sandy, clayey with moderate chalk
- 2024 offered near-perfect conditions, with no major weather extremes
- Certified biodynamic by Demeter
WINEMAKING
- Made from 90% St. Laurent and 10% Blaufränkisch
- Spontaneous fermentation with indigenous yeasts, initiated in stainless steel tanks
- Bottled at 20-25 grams of residual sugar, for the petillant effect
- Disgorged after the yeast naturally froze out during winter. Top-upped with a fresh batch of the same wine before resealing
- Unfined, unfiltered. No added sulfites
