GROWING

Organically farmed Pinot Gris, grown by Mike and Margaret Sparrow, Mt. Torrens, Adelaide Hills
Grapes were picked slightly earlier than the commonplace, to retain the fresh acidity and flavour brightness

WINEMAKING

Grapes were destemmed into a fermenter, where they were fermented on skins for 2 weeks
Pressed into old French oak barrels for a 6-month-long maturation
Made from organic grapes only, with nothing added at any stage
The wine stays unfined and unfiltered
Bottling took place in November 2024
90 dozen were made

Notes from winemaker:

“Oh, Pinot Gris! So often is made into a white wine! This one is a red, although the lightest red possible, a blush rose.

Watermelon juice merrily marries red apples and a faint vanilla bean, lightly wrapped in the softest tannins. Full satisfaction guaranteed.”
