GROWING

From the oldest vines in the vineyard, 35-40 years of age
Soil: Ponca, which is composed of alternating layers of marl and sandstone. A very well-drained soil, suited to the high rainfall level of the region
Organically farmed, stunningly low yield
Hand harvested

WINEMAKING

Grapes are destemmed, gently crushed with pneumatic press
2-3 months on the skins in old Slavonian oak vats (no temperature control, no sulfur added), racked and aged on lees for the next 3-4 years in large-format Slavonian oak casks, racking twice every year
Bottled without fining, filtering, or sulphites
1-2 years in bottles before release, depending on the vintage
