GROWING
- Viticulture: Practicing biodynamic
- Soil: Loam, Granite, Sand
- Grape from Sellicks Hill, Krondorf, and Springton
WINEMAKING
- Pinot Meunier was to bring the density, intensity, and structure from 2018 – a vintage of small berries and high extraction.
- Sémillon from 2019 was a 100% whole bunch carbonic and aids in a fruity lighter nose bunch also adding weight through the palate.
- Cabernet Franc from 2020 was on skins for 4 days and then fermented in a ceramic egg for the roundness of acid and complexity.
- Separately aged in barrels and blended just before bottling.
WHAT’S GOOD?
- A snapshot of 3 vintages – 2018, 2019, 2020.
- This has bags of wild strawberry sour cherry with a meaty whiff.
- It is tight, with mouth-coating tannins that are evened out by racy, tart acidity.
