#unfined101: How to store your natty bottles?

So you brought home a few natty bottles - welcome to the club! Now comes the part most people forget: storing them right. Natural wine is a living thing - no chemicals, no BS. Which means it’s got feelings, and it needs to be stored with a little more care than your average supermarket red.

#Where_to_store: Consistantly cool & dark space - around 12–15°C is ideal. And don’t forget to avoid direct sunlight + frequent temperature swings. So... a wine fridge is more than perfect, and a regular fridge is also a safe option (but not the fridge door as avoiding sudden temp changes is a must!).

#When_to_store: As soon as your bottles arrive. Room temp in Vietnam (25–28°C) might feel fine to us, but it’s a bit too warm for natties. So leaving it out for even a couple days can mess with the balance. (They’re just like us - rest better in the right environment 😉)

Sometimes we skip the big tastings and just hang out with friends, opening a few bottles for fun. This little weekday session with the Lucy M lineup turned out to be one of the best. Anton’s wines are super chill but still somehow hit deep - like they’re just expressing what nature has given them, totally free and honest.

𝗧𝗘̂𝗧𝗘 𝗗’𝗢𝗘𝗨𝗙 𝟮𝟬𝟮𝟯 (Sauvignon Blanc)
The most aromatic cuvee of the line-up, tropical fruits (ripe mango) with a touch of green. Tannins are there, but gentle like your cat’s purrr when she is happy.

𝗟𝗘 𝗣𝗘𝗧𝗜𝗧𝗘 𝗣𝗜𝗖𝗖𝗔𝗗𝗜𝗟𝗟𝗬 𝗖𝗛𝗔𝗥𝗗𝗢𝗡𝗡𝗔𝗬 𝟮𝟬𝟮𝟯 (Chardonnay)
Starts off like your classic Chardonnay - all elegant and polite - then suddenly it’s offering you childhood snacks like dalgona (caramelized coffee candy) and crispy cơm cháy (crispy scorched rice). Smooth acidity, nicely balanced.

𝗡𝗢𝗜𝗥 𝗗𝗘 𝗙𝗟𝗢𝗥𝗘𝗧𝗧𝗘 𝟮𝟬𝟮𝟯 (Gamay, Pinot Noir)
Soft & fragrant - basically the rom-com of red wines. You don’t need to overthink it, just sip and smile.

𝗟𝗜𝗚𝗛𝗧 𝗥𝗘𝗗 𝗦𝗬𝗥𝗔𝗛 𝟮𝟬𝟮𝟯 (Syrah)
Light Red Syrah is that friend who’s soft-spoken but absolutely nails the playlist. Herbal, savory, and secretly the life of the picnic.

𝗦𝗔𝗡𝗚𝗜𝗢𝗩𝗘𝗦𝗘 𝗦𝗧𝗨𝗣𝗘𝗙𝗔𝗖𝗘𝗡𝗧𝗘 𝟮𝟬𝟮𝟯 (Sangiovese)
This one feels like walking through an old Italian villa in silk slippers — structured, a little rustic, but totally elegant. Makes anything greasy suddenly feel gourmet.
