This Sauvignon Blanc is like that friend who’s both easygoing and secretly complex. Fragrant, grassy-fresh and gently spiced, it spent a whole month “soaking up stories” on its skins before moving into old French oak for a well-earned rest. You can expect a deep-yellow glow, tropical fruit aromas laced with herbs and spice, and a palate that’s lively, acid-driven and juicy yet totally refreshing. We start from 5PM with noodles & wine at #360k (#combo_only). Bowls are limited and all homemade with real toppings. #Wines_by_glass are flowing all night, so stay late for more pours!

People often ask us how to pair wine with food. There are definitely some guiding rules, but no fixed formula - and that’s part of the fun. We learned the basics the way we do most things: tasting our way through dinners (all kinds of it), afternoon snacks and random food encounters. Here are a few lessons that stuck with us:
1️⃣Lightly seasoned food can feel happier with light wine. Fresh cheese, poached fish, spring veg - they often click with something crisp and lively.
2️⃣Big, rich dishes could be even better with a wine that has some weight to it (but not too much, otherwise the whole meal will be too heavy!). Slow-cooked beef, stews, roasts - they tend to shine with a bottle that can stand up to them. On that note, sometimes a light fizzy red can bring a pleasant surprise to the table.
3️⃣Acidity can work like a squeeze of lemon. A bright wine can cut through cream, oil and fat and wake the dish up.
4️⃣Tannins should be softer with protein. Steak, duck, charcuterie - that’s why they often taste so right together.
5️⃣Tiny flavour echoes can make magic. Peppered lamb with peppery Syrah, lime zest ceviche with citrusy Pinot Gris. Like harmonies.
And the best part is that the natural wine blows the doors wide open. We’re no longer stuck in the old “big red” or “clean white” lanes. There could be light reds, skinsy/orange whites with texture, pét-nats that carry a spark of wildness,... And for that, it should be some exceptions. Skinsy whites with curry? Can work sometimes. Chilled light red with spicy noodles? Can work too! You can swipe right for some suggesttions we come in mind with natural/lo-fi wines.
So that’s the groundwork. We’ll be back real soon with an extension on this pairing stuff, chinchin!

Our #UnfinedTravel content is back! A flashback to our March travels to one of the most iconic Austrain wine regions - Burgenland. This time we are dropping by Weingut Pittnauer @pittnauer_winery.
We visited Pittnauer on a rainy day end of March. Not ideal, since we couldn’t walk around the vineyards, but the upside was more time in the cellar with the energetic couple themselves, Gerhard & Brigitte. They welcomed us into their tasting room full of colors and thoughtful interior arrangements, perhaps the most playful tasting space we have been to.
As a must practice of our cellar visits, we tasted straight from the barrels. It’s always captivating to feel the wine in its maturing stage before it reaches full potential. Brigitte moved quickly from one barrel to another, up and down, pulling out wine using the syphon and sharing drops like a big mama. Meanwhile Gerhard stayed mostly on the ground - steady, gentle, and patiently answering our questions. The contrast between them is exactly what you taste in the wines: energetic and lively but with a mature pack of characters.
Pittnauer follow a strictly biodynamic approach. Every decision, from vineyard to bottle, is made with sensitivity to nature and the belief that good wine comes from doing less, not more. They’re directly involved in every step of winemaking and distribution, so every bottle carries their care and their lively energy.
Speaking of energy, Brigitte performs an energy clearing routine with sage and other herbs every weekend so the wines rest in good vibes and the team return to a space full of positivity (you can spot her ‘ritual’ cart in the photo).
Lunch was six people, two hours, twelve bottles and generous yummy food. We talked a lot, felt a lot too. Once again it reminded us that small-batch artisan wines reflect the people who make them. These are wines that are fun, each with its own twist and so much character - just like Gerhard & Brigitte themselves.

Our Austrian Trade Tasting a few days ago came with a little twist: a guided session followed by a freestyle tasting. The day wouldn’t have been the same without the incredible line-up from @pittnauer_winery & @gutoggau. We also had @kttassy all the way from Osaka showing how beautiful Burgenland (Austria) wines can be, how they shine through the harmony of local grapes and terroir and how that energy can go so well with Vietnamese dishes.
A huge hug to Uncle @markshimmori for keeping us happily fuelled with his sandwiches while still managing to mingle and taste wines on his happy feet - he sure knows our kitchen better than we do haha!

St. Laurent brings deep fruity notes, while a small amount of Blaufränkisch adds minerality and more red fruits. Big spoil: #gỏixoài loves this bottle!

A non-dogmatic rosé: not just about mineral but much more complexity from raspberries, red apples, oranges and a delicate herbal note – everything in flux and free to change over time. The texture is delicate yet substantial, while a never-intrusive but noticeable zippy structure presses on the palate.
